Tortillas

Ingredients:
1/3 cup tapioca flour
1 cup sweet potato starch
3 eggs
1/4 cup water/milk
1 pinch salt
1 tablespoon butter/coconut oil

Directions:
Mix dry ingredients.
In separate bowl mix wet ingredients.
Then combine.
Heat griddle to about 350 and pour into large circles they will cook fast.
You can also use a tortilla iron or fry in an egg pan.

Ham Fried "Rice" (riced cauliflower)

1 cup diced ham
1 cup frozen peas and carrots 
1 cauliflower
1 scrambled egg
1 tablespoon (or to taste) Bragg's Liquid Aminos 

Instructions:

  1. Scramble one egg and set aside
  2. Pour enough oil to cover the bottom of the pan.
  3. Food process the cauliflower using the shredding blade.
  4. Add cauliflower to pan and stir-fry until soft.
  5. Then put the frozen peas and carrots, cook until defrosted.
  6. Turn off the stove and stir the scrambled egg and ham.
